Yes. Good castles would make a big problem for em if they decided to keep assaulting em. Castles in West Europe are no much for fortifications in East Europe or Asia.
So lets say that mongols would not just stay still near castle. Siege would take some time and numbers doesn't matter that much. So what mongols could do? Lets say that they are fast, even in deep forest. Faster that heavy cavalry and infantry. They are many.
I would do it same way as they did in Rus. Attack in few times. First time is to check things out, try to destroy main forces and also grab some money, provision, slaves w/e, destroy morale and economy a bit. Then in 1-5 years they can regroup and come back. Ofc Lords will be aware this time, but if first invasion was succeed, then it will be harder to oppose something to invaders. Not saying about whole Europe, but like 1/3. It's tricky here. Discover, stab and try not to show self as a threat for rest of Europe, so they will not unite against you, but instead will try to call wars 1 against another, just because he lost his troops in wars with you.

Somewhat off topic here, but it's interesting that the Khagans of the Golden Horde and the Ilkhanate are both of the emperor-tier, and since they were technically vassals of the Mongol Empire, does this mean that the true great khan/supreme khan of the Mongol Empire is of some tier beyond emperor? (Super-Emperor, Supreme Emperor?)

Weren't they King title in real? And Emperor was in China. Can't remember relationship between em. They were independent, had a war with China, but at same time accept Chinese Emperor's rights.

Khagan, or Khan of Khans is similar to a King of Kings title. English writers have a tendency to translate any foreign King of Kings level title as "Emperor." Even the Chinese "Emperor's" status in English is a result of this practice. The Chinese Emperor's title is "Huangdi" which is more like Sage King or Celestial King rather than "Emperor," which is specifically a monarchical deviation of the Latin "Imperator."

Anyway, I didn't mean to turn this post into a nerdy etymology lesson, so I'll just get to my point. Like the Chinese emperor, the Khagans are considered to be above normal kings, which would appropriately place them on the emperor tier in this game.

Taking back my words about mongols not being OP.
I was a king of Italy. Got all territories of Roman Empire except for France, which was ruled by my dynasty member.
It was 1270 i believe. Persia was under Ilkhanate. Rest of Seljuks and Caliphate was destroyed into independent pieces and were separating my Ilkhanate. I do not bother about those, since they were fighting holy wars with my vassals.
It was my fault to leave Golden Horde w/o eye for a while, while i was destroying rest of Byzantine Empire (which was also ruled by my dynasty member). I wanted to create Latin, and to destroy it from inside i did some martial marriage and some assassinations to put Catholic Emperor on Orthodox Empire throne :p But nmw. Horde...
So those Batu's guys... they got whole East Europe. From Ilkhanate to Karelia. And were invading into West Europe. Up to Poland and Hungary. So i was bordering with em everywhere. Still they didn't attack me. Funny that statistic showed that Golden Horde had 60k and me have 390k. Second Place was by HRE with like 150k.
At that time i really didn't bother about thinking that Golden Horde still getting those doomstacks event.
So Pope called Crusade for recently conquered Hungary. Well. Soon or later i had to fight em, so better do it now, before they grow even more :p
Holy **ck. Almost whole my army was at borders of Hungary. 300k.. My counties could hold 20-30k supply. Hungary's could hold 5-12k. Suck, well.. I am not counting France as a crusader. They were moving slowly (since i control sea, it's really fast to move army with a fleet) and only by 4k-6k stacks which can't be compared to stacks of Mongols which were refreshing like a mad. 20k smallest. Usually it were 30k-40k. Sometimes 60k :) But problem was not in stacks themselves. But more in a frequency of em appearing after being defeated. And ofc my 300k were completely vanquished by those fast appearing stacks. Guess in this situation the only way is to gather whole army around 2 places (self and ally) and just provoke Horde to attack slowly conquering because by just defeating those doomstacks with 1 province conquering will raise score.. Too bad i did realize it's soo late :(

I thouugh of what IMO is a good system.After the mongols(golden horde/ilkanate)capture a whole de-jure kingdom/empire one of these stacks disappears for a small amount of time("settling down).That doesn't happen with titular kingdoms/empires

the only issue i have against the Mongols is their lack of attrition. Makes them capable of having a 200k or more army stack in a single county.

Makes it a slow slugging losing war for me no matter what i do since I can barely maintain half that in several adjacent counties and theirs is more than half horse archers and heavy Calvary. Even though my entire military outnumbesr that single stack by two to three to one odds i cant defeat it due to concentration of force in a single county....
