Yes, but there is no reason to. Press it and then destroy the title to prevent the vassals from claiming someone else as Emperor.
Absolutely possible, Ive held multiple Empires serveral times.
Sadly because of game mechanics, its not always smart, unless you can turn your extra empires into Titular empires. More titular empires is always good, basically free prestige. But it takes awhile to assimilate an empire you can create into a titular title, except for the easy ones like the Latin Empire that can start that way.

Well, result was I would not say complitly disastoroes, but unexpected and I do not undestand it.
Events, I claim V Empire for wife of my son. She got empire and bouth of them move to constantinople. I promtly die.
My son inherit empire of Russia and soon got a huge Independence revolt. My son, who is heir of V empire, still live in constantinople, where my now wife still rule. He grow up to be a greek.
Now I die why putting down revolt when My mother still rule V empire. My son inherit kingdom of russia and now greek, which is bad enogth as he is foriner averywhere.
Now the nmost disastorous part, when I still putting down revolt started in my father rain, my mother, impress of V empire die and MY Dother inherit V empire, not me. In addition, somehow she took a big part of Russia empire into V empire. I am atterly confused.

What is "V empire"? And also, that's why I stay out of Russia until I have enough power to crush revolts. That place is a mess.
