The way the AI thinks about these things currently is that if it is Christian it will only care about how much grandeur it can gain from a language if that language is also used in a Christian court. Muslim kingdoms will likewise only compare themselves to Muslim courts, etc.
It will also generally be very reluctant to adopt court languages that are not used by kingdoms with a capital outside of its own near region (so Scandinavians will prefer to pick up languages popular among other Scandinavians for instance).
Lastly it is also valuing its own language more highly than all others (more so the more counties it has that speaks said language) and will be reluctant to switch from one language to another in general.
All this means its pretty hard for a language to become as dominant as in your screenshot, but it can happen - especially if some influential Christian kingdom switches. It is interesting to see since we had been thinking about making it a bit less biased against foreign languages due to rarely seeing it pick anything except its own court language in AI only games
