ENG has a rather slow/dull early game, but the race for the oversea colonies makes it really interesting again.
However, if you want a more interesting game, you should try to hold Calais. Just own that one single province, make it the staple port, build the march and stack as much forts and defensiveness as you can. This will allow you to fight a lot of fun wars against FRA and/or BUR, which also gives you the benefit of slowing down their expansion elsewhere.
That being said, ENG is probably a lot more fun in MP games. There you can act as some kind of "police for europe" to help maintain the balance of power and keept other player nations in check.
