I am playing a Sardinian Campaign rn but was wondering if anyone has any suggestions for some starts. Amy suggestions at all would be much appreciated.

Probably not a super interesting start but a fun one nonetheless, The Emir of Sinai in the Old Gods start date, Ahmad al-Tuluni has incredible starting stats and traits.
You can take over Egypt as happened historically or you could go into the Levant or maybe even Arabia.
Really it's just a strong Muslim start, so far I've only went the Egyptian route and had a lot of fun, the duchy of Cairo makes for a very good capital.
As a bonus consider converting to another branch of Islam to make expansion easier, as pretty much everyone you border is Sunni, my personal favorite has to be Kharijite for its incredible martial bonuses.

Ioannes Axouchos, the kingmaker of the Eastern Romans is pretty fun.
He was the childhood friend of Ioannes II, an extremely competent general and loyal to a fault. He first secured Ioannes II accession to the throne by opposing Anna Komnene and her mother and he later followed his friend's wishes and secured Manuel I's accession to the throne, when Ioannes II died. He did that even though he thought Manuel's brother to be a better candidate for the throne.
If we could simulate his life, without railroading the game, i would consider our mod to have reached perfection.

I could suggest the "Collapse of the Seljuks" bookmark (May 1157). Crusader states are already there, of course, but the Muslim east is divided; North Africa is divided between the Almohads and the Kingdom of Sicily; England controls half of France, etc.
