Compared to the later starts there aren't so many historical characters outside Francia in the 769 start.

Harald Wartooth in Sjaelland - first known/documented "king" in Scandinavia (double duke in-game IIRC).

Loup Louping in Aquitaine - has an established dynasty, actively opposed Charlemagne and dynasty fell into obscurity eventually as a result. I also really like their crest.

A couple of historical Greek counts in/around the Duchy of Athens, one that would later become Emperors. Apart from that Byzantium is mostly generic auto generated houses. Angelos Dynasty (in power at 4th crusade) is somewhere in Anatolia too.

I also like the Shia starts here too, the tribal ones in West Africa (create a Muslim Gibraltan republic) and around Mecca. Both challenging and you have the potential to create the Shia Caliphate.

Sigurd "Ring" of Munso. The daddy of Ragnarr Lothbrok.

Guillaume Niebelunging, Duke of Toulouse. A dynasty related to the Karlings that have large holdings but faded away by 867.

Lope de Vasconia. One of the three playable basque characters in 769, rules the Duchy of Gascogne.

Desiderius Alachisling, King of Lombardy/Italy. A high rank character, can easily flip to Italian and you can control the Papcy.

Gausian dynasty of Benevento, large duchy in southern Italy.

Urguist Circinn is a pretty fun character. The High Chief of Fortriu up in Pictland, it's really easy to press your claim on the Kingdom since all of Pictland is sworn to you aside from the King's two counties. Pretty neat to unite the Picts and make certain they never fall/become Scottish. Plus Picts have some funky names.

Dal Riata, the Irish duke in Pictland is fun, plus if you can get Scottish culture to appear you can get the schiltrons, which are beasts.

Zunbils are always fun.

Otuken, far northeast, is the only Mongol realm at 769 start, so you can become the Great Khan, but you start with only 2 counties and the tributary of a much larger horde.

Magyars, do you follow history and settle in the Carpathian basin, or not.

Semien, the only(?) Jewish realm in 769, in Ethiopia.

Tribal kingdom of Saxony, see if you can survive against Charlie.

There is a buddhist king in Bengal (Pala I think) that is quite fun.

I've always thought about trying to unite Wales or reclaim all of Brittany from Charlie and then maybe trying to create a Celtic empire (especially interesting in CK2+ when you can also be Celtic pagan religion).

Always fun, while tribal, somehow acquire the duchy of Flanders and then start a republic there. So many holdings, plus you don't have the competition from the Mediterranean republics until late game. With Conclave you can buy favors from everyone. Probably easiest as Norse Germanic if you reform and then holy war for it with a bunch of tribal event troops.

The Eóganachta
In southern Ireland there are 3 counties of Eóganachta dynasty rulers. I never played Ireland as a noob land, and always took it very seriously and often expanded, bringing the Irish to the rest of the world. When I decided to play in Ireland I took a good look at the different dynasties and found a ton of information about them. I fell in love.
Before reading too much I made my choice. Eóganacht-Locha Léin in the western county of their kingdom of Mumu. Ireland has a few different dynasties that have different branches like the Eóganacht Chaisil who rule the same county but in the 867 start, or the Eóganacht Raithlind or Eóganacht Glendanmach. I personally choose them and just stuck with them. They became my Irish home team even though I'm not Irish at all myself. There are others as well like the Uí Briúin Ai and Uí Briúin Bréifne, also another interesting one the Ua Niall Noigiallach which is Niall of the Nine Hostages (cool name?)
I learned a ton of Irish history due to delving deeper into all the different groups. At one point they battled these creatures called the Formorians! Similar type of good stuff like the old Norse legends.They're also set up NICELY to go fight in Hispania as some believed they had originated from Galacia. Move over Asturias, we got this!
Ireland is an awesome magical place, don't overlook it because it's sometimes considered noob-island. Don't bother with England or Scotland, just form Ireland and then branch out from there and do something else. The Empire of Britannia will just bog you down, save it for another play through. I took things slow, first battling the other Eóganachta to become the king of Mumu first. The King of Tara was their unofficial high king, so I made sure to not snatch that title before I felt I was worthy to hold it. Eventually conquering the rest of Ireland but maintaining Eóganachta dynasties and letting them rule land. I tried to keep as many of the old Irish houses alive as I could. You know how it is though, some houses are just total bastards and lose their heads.

You cannot play as him from the very start. He only shows up if Charlemagne takes Saxony. He will have a special rising up event with a bunch of troops that usually take back Saxony. A unique part of this is that Charlemage can choose to destroy an important holy tree which I'm pretty sure he always does. This add's to the glory of Widukinds rise. As the player though I suppose you could choose to not destroy it.... SO, if you jump in at that point as him you have the choice of either trying to continue on as a pagan or go Christian and be on the forefront of battle with pagans to your north and east. Historically Widukind lost the fight and then ended up turning Christian, but what you do with him is up to you.
You'll have to use the console to go into Observer mode to let time pass until the event happens. This will depend on Charlemagne a lot. You could also simply start as Charlemagne and insure it happens and then just switch over to Widukind.

edit: Or take the fight right BACK to Charlemagne and see if you can beat the Franks.

The count of Gwynedd, house Gwynedd. Usually starts stronger than his liege, and has a nifty claim on a part of scotland. Makes for quick work towards the kingdom of Wales and Scotland in just 1-2 lifetimes.

Pagan Saxony is fun. Form a germanic HRE with a dude of the dynasty who formed it: Liudolfinger.

Yep, I'm playing that dynasty now. It's the only independent Buddhist dynasty in northern India in 769. There are 1 or 2 independent Buddhist dynasties in southern India, but I don't think they have as interesting a starting position, though they might be more of a challenge.
