I would add flavour events and decisions basing my knowledge from the demo. For example Burgundy should have events or decisions regarding the Golden Fleece Order, or some festivites where something out of ordinary happens and the news of it arrive to the lord like, ex: harvest festival (where there is a great harvest and everybody is extra happy), lent (somebody discovered that X character eats meat during lent! should we reveal it?), easter or carnival (some people still conserve some pagant customs despite being christian), etc...
Also, more "urban" and "trade centered" zones could get events relation politics or economy like, ex: X city has aproved the creation of a guild bringing new riches, the council demands certain privileges for the city, trade has grown/ diminished during these times of prosperity/war and so we have a positive/negative modifier for X city's income.
Others could be like: a monastery has copied an important book brought by the crusaders, so a new technology was introduced in your realm, more monastic related events, because just now is like if there were no monasteries, etc..., also the possibility of buying indulgencies for family members or even revoke excomunion for deceased family members (growth in prestige and total game points because of piety increase for the deceased).
More plots are indeed also necessary. What if I want to provoke a rebellion inside an enemy realm so they don't attack me? (a la byzantine). What if I want to send missionaries to other lands? Wouldn't it be cool to create your own khight's order?
