So I was recommended Stellaris on Steam since it's similar to Spore: Galactic Adventures and it definitely sounds up my alley, but 13 DLCs is a bit overwhelming. X'D For the sake of not breaking my bank, which ones should I go for? Or should I stick to Vanilla for now?

Just stick to vanilla to see if you like it first, but now is not the best time to play the game because you see when paradox release a new dlc it comes with a tons of bugs and broken features so you should just wait a week or two to play...

Agree with the above,

Play vanilla, see if it's your cup of tea, the DLCs are all nice to have but if you don't like the game there's nothing in the DLC that will change that.

The horrible state of the current patch aside, the game is playable just fine without any DLC. So try out the base game first. Then you can start by adding Utopia and Distant Stars

Do not buy Megacorps as it's tied with the newest game version (2.2) that is currently riddled with problems.

2.0.x version is fine. I'd suggest to but the base game, then IF it suits you, buy Utopia (best DLC). Leviathans and Distant Stars are next in quality.

"Hey, That's what Spore should have felt like in the Space Age" was actually my thought after the first few hours of playing Stellaris, so, the recommendation is sound.

As people said, vanilla is fine.

If you want DLC, I'd say Utopia and Distant Stars are the two that were the most fun. One adds hive minds and "classic" mega-structures the other enriches the game's events and storylines.

As for 2.2 being bugged, the biggest issues right now are that the AI isn't very good at handling the new game systems (still plenty of challenge for your first game) and that Synthetic Dawn content (robot empires) aren't really well balanced for the new system.

That said, 2.2 is playable, and without a pre-conception of what a Stellaris game ought to be like you may even like it more than the older versions.

Yeah, the main reason it sparked my interest is because Space Stage was starting to get repetitive.

The main reason I asked about DLCs out of the gate is because I'm worried that if I get too used to playing Vanilla I won't be able to adapt to DLCs added later; at least with Spore the DLCs added to the gameplay rather than changing pre-existing mechanics.

As it stands I'm gonna wait a few more days and see if Stellaris goes on sale for the Steam Winter Sale, so should Vanilla keep my interest I'll definitely keep Utopia and Distant Stars in mind since those seem to be the most recommended.

Utopia with the ascension paths and megastructures is by far the most essential DLC.

If you want to buy more, I would recommend either Distant Stars (tons of new anomalies and events plus the L-Cluster) or Apocalypse (marauder empires, planet killers and the Horde) since they are great for spicing up the midgame.

MegaCorp is the next one, it adds corporate empires and a bunch of other stuff. Synthetic Dawn (robotic empires) and Leviathans (space monsters) are kind of nice, but not that essential.

The Plantoids and Humanoids species packs are even less useful, they are just flavor packs that add a bunch of species portraits and unique art.

So, in order of recommendation:
Utopia > Distant Stars/Apocalypse > MegaCorp > Synthetic Dawn/Leviathans > Species packs

You can play with all DLC with someone from MP but if you want to get DLC
Get: Utopia / Apocalypse / MegaCorp and maybe Synthic dawn if you want to play robos later.

You can ignore distance stars, leviathans, and any packs.

The Wiki has a list of all the DLCs: https://stellaris.paradoxwikis.com/Downloadable_content
After playing 1-2 vanilla games you should judge for yourself which ones you want to try. Personally I find Utopia (for Megastructures & Hive Minds) and Synthetic Dawn (for Machine Empires) the most important. The new Megacorp expansion is also nice if you like playing tall empires (as the new Corporate government form is good for this) and it adds Ecumenopolis (City Worlds) which is also nice if you are willing to play longer games.

Basically the ones tagged with 'Major Expansion' add game mechanics (new government forms, new ways to build up your empire etc.) and the ones tagged with 'Story Pack' add content (more events, more space monsters, etc.)
It really depends on your own preferences, which one you like best.

Try a game in vanilla first. If you want more then I'd recommend Utopia and Distant Stars above all else, then Apocalypse and Leviathans.
Synthetic Dawn and Megacorp are more niche IMO
