This is very gamey, but I have found no reason to accept the surrender of the holy war that was waged against me. I'm getting +30 per vassal for "Defending vs. Infidels," and it seems my vassals are reluctant to revolt against me while this war continues. Prior to the war, I was putting down revolts left and right. Now revolts are nonexistent.
There are only a few downsides that I can see... I can't hold a grand tournament, and I can't give away lands to the Pope. Other than that, it's great. Occasionally the AI even attempts to surrender to me and I just decline. Sure, occasionally I actually have to deal with the infidels coming after me, but for the most part they are totally beaten and have no chance. I suppose this tactic works better end game because I began in Ireland and founded the empire of Brittania, including France and all of Hispania.
The war started in 1360 and it's now 1440.
