Playing King of Poland, having conquered Pommeralia, I sent my religious councellor (forget the title, sorry) in to convert the Pagans. After a while I started getting messages that such-and-so has converted, but the religion overlay hasn't changed, and I am still getting the "wrong religion" penalty to taxes and levies.

I'm sure it's WAD, but what am I missing?

Characters converting is different from the province converting.
Both have a chance of happening if you send your chaplan, but single characters obviously have a much higher chance to convert than the whole province.

You just have to wait until the province conversion happens.

I would expect based on my limited knowledge of CK1 events that the more and higher nobles he converts in the province the better his odds of converting the whole province at any given event check become, so was said, hang in there, you're making progress.

It seems to me that if the province has been heathen a long time it's harder to change than a province that just recently changed religions. From my games in spain, i see some provinces literally change in like 1 year, while others that are deeper into "moorish country" seem to never want to change.

Partially correct. Variables to decrease/increase time include:

Faster:
- Same Culture/Culture-group
- Same Religious group
- High 'Learning'
- High 'Religion Authority'
- Force Converted

Slower:
- Low 'Learning'
- Low 'Religion Authority'
- If it's a Heresy to your Faith
- Is a Heretic Stronghold

So while it'd be nice if it also reflected having bordering provinces of your Religion as something which, via the likelihood of the populations being mixed, sped up conversion slightly, it's not part of the set-up as of right now. However if it's in newly conquered foreign lands several things would be against you, like not sharing the culture or being in your religious group.
