So i order my infantry squad to kill a mortar (and another next to it) at 200-300 meter then seeing how ineffective it was, closed the range to 100 meter and less.
Its take a while, the mortars does not even surrender or fight back. Still its so long that the opponent was able to call a fighter to strafe my infantry squad to death just next to his...static not moving at all mortars (he did not even tried to move them).

I know there is an AT gun gun in this forest trying to get shot at my vehicle, i send two infantry squads to flank it.
They finally got hunted down from the AT gun and 2 men reconnaissance squad.
One got pinned and shelled to death while the other was alternating between 'pinned down' state and 'lets try to fire a shot'...but at least at the end i was able to force the gun to go relocate elsewhere, its all good right?

I am in heavy bocage and my vehicles can't really follow my men. I have 2 squad and half, i see a lone AA piece in the middle of a little clearing, its almost completely surrounded by my men, maybe... Trust me, do not. May all of them rest in peace, slaughtered from the terminator like AA gun.

I know i did not read all the available books about WW2 warfare but should those gun decimate infantry and be so resilient to their fire at so close range and outnumbered without any support (their own infantry/vehicles, etc...)?

Useless soldiers... a couple of Half track with CWIS machine guns would have do the job best.

PS: when i do see the vehicle mounted Bren have 5 more HE and 200 more meter then the infantry Bren. Considering that infantry HMG and LMG does not even try to fire back at light vehicles...the hell is this.

You need to specify what type of infantry units you are talking about, they are equipped with a variety of weapons. Plus what are the models of AA, AT and mortars?

Taking just the Scottish Infantry, they have AT with the gunners exposed (6 Pounder) and those where they are in a heavily armoured vehicle (Wolverine) that will be virtually immune to rifle and MG fire. Same with AA guns - Bofors exposed, Humber is an armoured vehicle. The Scottish don't have an armoured vehicle option for light mortars, but I think other Divisions do, with mortars mounted in half-tracks.

If the mortar crew are exposed, and rifle/MG fire has them pinned down, then at least they can't fire against any of your units. But it can be frustratingly long to kill pinned down units. If you get a unit very close to them they surrender. But don't even think about attacking an AA gun with most unsupported infantry. Use artillery, bombers, smoke them to prevent them firing etc. Only infantry that are in hard cover but close enough to lob grenades, or have AT weapon might have a chance. Never had my infantry close enough to one of them to be sure.

Towed guns, exposed guns.

Brit rifle with 1 start at close range 0-100m. taking a while to kill a couple of mortar for example.
Pack 38 (?) + the 2 men reco versus infantry.
Germans Fs and pioneer versus some Brit anti-air.

Pinned down units represent men who are lying flat on the ground, possibly some are in ditches or shell holes. The game deliberately makes them more difficult to kill.

Get out of the trees and attack them at CQ, they should surrender. Even tank crews will surrender to infantry when stressed enough, but you have to get close enough to them.
