I am watching the Blorg series and I am on # 12 and they have all their ships in one large fleet.

I was wondering if there is a limit to the size of an individual fleet and if not then I would suggest doing so, I do not like the doom stack game that would turn into.

And from a practical point of view it would make sense to tie the level of your Admiral to the number of ships they can control.

Been discussed. No, not happening. Doom stacks can still easily be made by stacking three force-limited size fleets together.

And, as Wiz's war showed you, doom stacks in larger empires hurt the owner more than anything by leaving you with fewer options and garrisons.

And here is the exact same thread #20.

Watch the rest of the Blorg streams, you'll notice a distinct lack of doomstacks. There is no 'fleet cap' because the devs tried it and it changed nothing, except you had to move fleets individually to the same spot they were going anyway.

Nope. Because it doesn't do anything. It just means the doom stacks turns into two slightly smaller stacks that fight and travel side by side. It just turns into a doom sandwich, like the ones the Shabtaks get to experience with half a Blorg fleet and the Zracon fleet (which combined roughly equals the Blorg doom stack).

Doomstacks exist because they're useful. They'll also get split up, because just having a single fleet means you can't respond to enemy aggression. Fleet merging and splitting is something for the player to manage for the situation at hand. Against multiple fronts and faster enemies, they're not fantastic.

Keep watching those streams. The balance of Stellaris is such that smashing enemy fleets doesn't do you nearly as much good as smashing enemy infrastructure, since they can keep churning out new ships indefinitely until you do; compared to EU4 or CKII, killing their dudes gets you very little time. You need to win the battles, yeah, but you also need to destroy their starbases and mining stations, while simultaneously protecting your own.

Besides, composition seems to play a pretty big role here. Even a lower-tech species with fewer ships can potentially knock a (reasonably) more advanced fleet down if they build it right.
