One minute I had +76 minimum for energy and minerals , I had -230 food and much less loss on all other resources. Then suddenly it dropped. What could have caused that? Barely anything is going on and nothing should be able to do that.

Read your tooltips.
When ANY resource goes into the red, it causes a debilitating effect on other resources. Don't ever ever ever let any resource run out, unless you're doing the commie utopia strategy.

consumer goods are used up and your CG income is negative. the penalty from that kills all the other inputs, too.
you may be able to turn it around by buying CG from the market. that would probably put your energy & minerals back above 0 if they were there before.

but you'll have to fix the issue that made it go to 0 with negative income if you want to avoid facing the same economy crash the next time the bought stockpile runs out
