Another game I want to try, is to start as the Ottomans as soon as they are in the game and see if I can dominate Asia Minor / Constantinople by the end of the game, or at least unite a lot of the muslim world and kick the Europeans arses.

Good luck! I tried a 1299 start, wedged between the Byzantines and the apparently not-so-faineant Seljuks of Rum. :) The earliest start point for the Ottomans is, IIRC, 1266, with Bey Ertugrul of Ancyra, at that point a vassal of Rum. One likely problem you may encounter is that as he's 75, he may die soon. :) (IRL, he lived to be 90+). In 1266, his son is only 8, so be prepared for a minority.

That's exactly why it's worth playing. And gives a very good idea of some of the challenges the real ottoman state had to face: they eventually managed to form the real universal muslim state (and the most stable muslim empire, despite its notorious corruption in later eras)... After Sword of Islam release, its a great story to play... and can be continued in EU3 (if you use the mod to import ck2 saves to eu3).
