I'm confused. Why are my borders "far" from my neighbors?

Is there a mechanic to this I don't understand?

I think it's a bug and I think it's fixed in the hotfix. Have you tried that?

Save and reload.
Whenever you form a new country this happens.

Save and reload fixes most bugs.

Ignore above answer, and upgrade to beta hotfix by opening steam properties of EU4 and going to "beta tab" and selecting the one that says 1.8.1 hotfix

Yep, it's a bug that isn't fixed by reloading. It is, however, fixed by the 1.8.1 beta hotfix.

Having had it happen to me three times before the hotfix was up, and that save and reload worked everytime I tried it, I am pretty sure it works.

OTOH, if there is a hotfix, use that instead to prevent this and some other bugs.

When I had it, reloading didn't fix it (though annexing land near various nations often did), but the hotfix did clear it up completely.
