That I have de jure claims on and I take the county from him (but he does have other vassals), would that make him lose his King title too and there would be no more King of France, or would he just take one of his vassals counties?

Take one from a vassal. At least that's what happened to Georgia in one of my games.
They take one from a vassal. I had a game once where I took all the lands of the King of Mauretania, he then moved his capital to some Spanish vassals land. Of course once I usurped his title it was rather humorous to watch his remaining kingdom fracture into 4 different duchies.
I don't think that's a very good mechanic. The vassal would just go "screw you are not my king anymore". What could happen to him anyway?
It is standart mechanic. You can revoce a title from vassal at any time if you have high enogth crown autoryty. He has 5 % chance to revolt. If you do not have claim on title you get -20 tyrany from everybody.
Technically he's backed up by the military force of the rest of his kingdom (provided hes well liked). The game does overweight the importance of royal lands to the kingdom, but you shouldn't be able to eliminate the crown of france or england by taking a couple of provinces.
Remember also the counties themselves are an abstraction. It was hardly one landowner a county (leaving aside areas where where land ownership was not a concept).
