Let's say you do the hunt event, maybe the possibility to choose the characters of your court who come with you hunting could add some roleplay.
For example you need to sway a vassal, you invite him. Or you need him dead, so you plot during the event.

Same with pilgrim. You go with some friends/vassals/family/knights and they become best friends, or rival or whatever during the trip to the holy site. Maybe connect this idea with the zealous trait for example.

When organizing a feast, connect it with "create a hook", like inviting the pope on purpose to have a hook against him.
Or if you want to seduce someone invite him/her to the feast to impress him/her

For "stress events" too, if you have the drunkard trait, you can drink with a vassal who is also drunkard and become friend.
Or being athletic with a knight who becomes your bodyguard.
