I know this is quite a longshot but, what about the ability to create your own tanks? Maybe
research certain things like armor or guns and be able to switch them up. It would be sweet to be
able to create stronger tanks than the historic ones alone. Example: you could have 128mm gun
on the armor of a sherman.

The variant system kind of covers this thought doesn't it? You get the basic model, and you can choose how to modify it how you like (for the four or so parameters at least, but for a grand strategy game that should do the trick)?

As the OP suggests, you can choose how to modify it.

The USA did, after all, manage to shoehorn a 155 on to what is basically a Sherman variant. (see M40).

Anyway, as I understand it, this feature is already covered under tech' research & experience upgrades. You just didn't get away with some guy suggesting it would be cool to fit a 3.7" AA gun to a Churchill in 1940.

I mean, why would you want a tank like that with AA capability?

But sir. It's to shoot at enemy tanks.

That gun was a howitzer though and without a turret or almost any horizontal traverse. As far as I recall the largest caliber weapon the Americans put on a turreted vehicle was a 90mm on the M36(M26 as well, but that saw very little action) and like the rest of the American tank destroyers the turret was open-top which leaves a lot of room for gun traverse and breaching.
