You want a well-placed supply hub. The railroad only needs to connect to that, not the actual province.

The deluxe version is using transport aircraft for aerial supply.
Tried using all of the above and it seems I just keep getting bonkers attrition. In my current run I've even found units are just... spontaneously disappearing, even though it says it's equipment and not manpower.

Supply gets projected from the hub, as long as that hub is connected to your capital. Things that affect the range you can project supply from the hub are terrain, infrastructure level, motorization level. All that said, there are some really bad spots for supply and you probably don't want to have your units just lining up on the border, make use of your supply grace periods and cycle units in and out.

And yeah, if either the equipment or the manpower hits 0, the formation is destroyed and whatever remained of the other pool, is lost.

It is not very hard to combat attrition. You need to allocate some resources to focus on it.
1. Build supply hub (or naval base) in every state and connect them all to capital hub
2. Build trains (or convoys)
3. Build cars to upgrade supply hub capacity
4. Upgrade infrastructure
5. Upgrade railroads anytime you still see bottleneck
6. Do not send so many divisions at one state cause bottleneck is possible
7. Add logistics support company to division in shitty terrain
8. Use field marshals with low supply ability in combat

How do you suggest I cycle in and out of the border with controls that force me to either draw a frontline, select an area to defend or have a constant red exclamation mark on every unit? Is there some option I'm missing?

Is there some option I'm missing?
I don't think the ! is really that big of a deal, compared to the frustrations of constantly being out of supply and having your formations delete themselves. But you could use the combined field marshal frontline with general area defense in an unreachable territory. Gets rid of the red '!', while letting you manually control where each of your formations go.

Hmm, there is also the option of using supply-efficient units. Iirc, cavalry requires twice as much supply as infantry and motorised ditto. Artillery is also one hungry hippo.

Tanks are a double-edged sword in this regard: While they require a little less supply than artillery and argueably do more, if they run out of supply, they also run out of fuel, so it's 1.0 km/h-time. :/
