Old version when game is updated.

What platform are you playing on?
Steam

What game version are you running?
1.01

Please select any/all DLC you have enabled.
Hellenistic world flavor pack,
Epirus flavor pack

Do you have mods enabled? No

Please explain your issue is in as much detail as possible.
WI made sure I have the 1.01 demetrius version several times, and when I start the game and pick a country from the New Game screen, not loading an old one, stability is still from -3 to +3.

I think this will not be changed until the release of 1.1 patch Pompey.

1.0.1 Demetrius is a hotfix.
The stability changes are planned for 1.1.
