I'm playing as a duke of Kappadokia and in my all games I inherit all Bizantium. But I don't want The only one way to not inherit is declaring war to them...

There should be an event "XXX is dead. Do you want to inherit: YYY? Yes/No"

Or playing as Kingdom of Italy I always inherit Germany

Loose prestige through claiming titles and give Duke titles to your sons and daughters. And then pray none of them gets Emperor.

You could reload as Byz and chance the laws of succession to primogenture or consanguity. If not related to them that should take you out of the succession.

Well in history people wanted.
And if they didn't want, the throne was captured by those who wanted, even if they were weaker and theoretically had less 'right' for the throne, so I find it completely realistic if good old Alexios goes mad some day and creates a secret Fellowship Of Anti-Emperors who all swear to never be Emperors (and takes his sons into the fellowship as the first members)..

The realistic thing to do (and probably the simplest solution) would be to accept your inheritance, and then immediately give the imperial title away to somebody else. That way you don't have to be Emperor, and you get to have fun deciding whom to give the title to.

Not quite. You could grant KoF to your heir, and re-load as him, and then wait for KoN to die. Then you have KoF and KoN instead of KoN and KoF.

No, won't be possible.

Another way of switching primary titles, is give the primary title you want to use to your first heir then save and reload the game as him and then kill your older ruler.

In your example, give the title king of France to your first heir, save and reload as the king of France and then kill (f12, die) the king of Navarre.
