I can't create a different variant classes from the same hull.

If you modify a Ship template without duplication, the current Template is tagged as "Obsolete" and a new one is created. You can de-obsolete them as usual from that.
If you in turn duplicate before making the changes, both Templates are around.

I am having trouble with creating different ship variants, too.

I can say without a doubt that "not working" has never been a sufficient Problem description.
What exactly are you doing?
What did you expect to happen?
What is happening instead or not happening?
