So in my last three attempts as England Burgundy always attacked me and the problem with this is´that they always siege Normandie and Caux so France will just group all their troops together and attack my 25k with their 50k (since noone of them is sieging Normandie/Caux) in Bearn and i obviously lose. It seems impossible to me to win in such a scenario, do you have any suggestions ?

Restart and hope they dont. I know this sounds harsh but that is Literally the best answer you got. I've played a few HYW win games and Burgundy ruins your day maybe 1 out of 3 games.
