I had England unify Britain and most of Ireland, as well as significant chunks of France and Brittany, then form Great Britain. A few wars with France and/or Burgundy(me) later, and probably some other stuff, i took another look at them: Scotland was independant and beating GB in the head. looked back a little later: Scotland, Lancaster (mostly Wales), Cornwall, all independant. GB getting beaten up, Ireland independant and unified. came back a little later, Lancaster's quite powerful (wales, a bit south east of that, a bit to the north, and London] , Scotland's got a pretty much all of eastern England, the south west is Cornwall, England exists as a OPM controlling... Wessex, i think? and GB is... gone. it doesn't exist anymore.

of course, all sorts of other fun stuff was happening other places [including the AI actually looking to manage to form Russia, France being reduced to the northwest third of france, and Burgundy as hereditary ruler of a Massively Expanded HRE that stretches from france [less France] all the way into Poland, and from the Danish border to the southern most tip of Italy... and the Balkans. oh, and some of the various member states had colonies in the Americas
of course, then i used the HRE decision to unify the HRE... which caused the game to hang, then decided that because burgundy no longer existed I'd lost, so went to exit... started playing the music, then crashed...
... admittedly most of that had nothing to do with Scotland, but it was still awesome.
