so i started a new game as Poland 2 days ago to go for the achievement "One King to Rule!" and i've progressed really quickly and i'm almost done with it. i forgot i left my game to Always keep this game up to date, but i have NOT updated it yet. i tried running steam in offline mode to disable that, but was unable to. is there anything i can do to somehow be able to finish my game without updating it now?

There hasn't been an update, so surely you're able to finish your game before that?
If not, then do not load that save after the patch, make sure you subscribe to the older patch. They upload the older versions to Steam as a Beta so you can continue playing a certain patch. Then you can continue your game with achievements still enabled.

On another note. You can upgrade a 1.18.4 game to 1.19 and still get achivments. (unless its some bugs).
