Rotten Venetic is right. As Turkey trade supplies, make Kazim Dzalp (Military Entrepreneur) Armaments Minister and Alparslan Türkes (Guns and Butter Doctrine) Chief of the Army. You can also make Mj. General Arikan (your only Logistics Wizard) a Lt. General and have him command your most supply hungry troops. Research Process Re-Engineering and Mechanized Agriculture first. Don't produce anything until dissent is back to zero then build IC in Istanbul and Ankara. One of them will be below 100%. When the other one finishes you can switch to producing units.
I think the main problem with is that there is an event for Attatürk's death that resets your sliders and makes it very difficult to do anything. Cozying up to the Soviets and trying to join the Comintern would probably be your best bet, but I don't know whether this is even possible.
As for Greece, your main problem is Germany. I don't think you can do anything except for raising infrastructure in Crete, start building IC there and put all your troops on the island once you're attacked.
By the way, you might want to think about playing on an easier difficulty level as those two countries are seriously underpowered.
