How to handle Ottomans as Ardabil/Persia

So I have a good game going as Ardabil, reformed into Persia, but the Ottomans are a massive predictable problem. They are allied with Russia of all things and I can't handle there massive armies. But what is the best strategy to handle them? I have already lost one war to them and now they have declared war on me again.

During my recent Aq Qoyunlu - Persia game, I initially allied Mamluks to discourage Ottoman aggression against either of us, then later allied Poland-Lithuania. The Ottos allied Russia, leading to some tough wars, but we gradually wore them down.

Picked defensive as my first idea. Built a lot of fort in the mountainous regions of Persia. Engage them while they're sieging your forts as they will be the attacker during the battle and you will have the terrain advantage as most of your forts are on mountain terrain.

Manpower will be your problem though as you're at war with Ottoman and Russia that can spawn a lot of armies.

Maybe ally with PLC so they can divert the attention of both but you have to be fast in winning the war before they make a separate peace with your ally.

ally PLC, sell them out for russian-ottoman border, hope they rival eachother

blob into india, you need to escape from them till you can take on them, what year is it, can you get a tech advantage and fight one of them through a proxy war?
