I've formed the scandinavian empire but the coat of arms looks horrid. I'm still pagan, so it's not the one the de jure title screen shows it as, and I've reformed the faith so I'm the flkyr so the title is different again. It's a white field with a purple waving line on it.

Any idea how I can change this ? I can't even find a guide/answer on how to change the pagan equivalent of flags, e.g. changing the christian flag of denmark is easy, but the pagan equivalent of the flag, I can't find it.

In the actual game you can't change coats of arms of formed titles. If they're de jure, they usually have a designated coat of arms. If custom, they seem to auto-generate.
Since I ran into a similar issue (didn't like a horrid coat of arms) a while back in a campaign, I would highly recommend Patrum Scuta for HIP, a mod that reworks title coats of arms and dynasty coats of arms and makes them more customizable.

There is a version that was reworked for HIP and it works perfectly for me as of July 2022 (upon starting a game, any potential religious CoA mismatch was fixed). Its exact name is "Patrum Scuta+ for HIP by BoSB" on the Steam workshop for ck2. (Paradoxplaza won't let me post links before 5 posts, and I never post here...)
I'm not sure if it's savegame compatible though.

Could you share how you were able to change a Christian title's CoA?
