I want to makes sure I've got all the strategies covered, because inheritance is everything in this game:
1.) Change succession laws
2.) Give your son a bishopric - Can't do it with son expected to inherit the primary title, but effective in prevent the division of land under Gavelkind. Edit: Doesn't work for Muslims and certain other religions (ie: Cathar).
3.) Make your son a Doge - I just discovered this cool strategy. If you grant your kid a coastal city, then the county the city is in, and then a duchy, he becomes the new Grand Mayor of a new Republic, which disinherits him. Works on the son expected to inherit the primary title. Works best if you have a King title and you can wage holy war.
4.) Encourage him to join a military order - If Catholic, educate your son to have high military stats, since this apparently increases probability. Might be other conditions too, anyone know them? Child must be adult, however.
5.) Force children to take holy vows - I've never tried this, but apparently you need to imprison them first (which gives -40 tyranny unless you caught them plotting or being heretical). Does this work on females too? This would be useful as I currently don't know any way to disinherit women assuming inheritance isn't absolute cognatic. Also, can you imprison children and force them to take holy vows? I think not, which is unfortunate. Waiting till they're adult is often way too risky for me, which is why I've never used this.
6.) Imprison + Banishment? - Haven't tried this either. Are banished character disinherited? Can you banish children? Edit: Banishment doesn't work.
7.) Get them killed somehow - Haven't tried this. Make them a court chaplain and send them to convert some pagans (but doesn't work if Orthodox/Miaphysite since court chaplains must be bishops). Or you can have them lead an army. Again, must be adult. Edit: Maybe you could educate your kid with a tutor that hates him and has a high spy rating?
8.) Just kill them - Assassinate. Apparently you can't use plots to kill your own children. You gotta do it manually. I've used this lots.

9.) Castrate - works only if you belong to the Byzantine cultural group and you suffer tyranny for the act. You can castrate children. Doesn't work on females. I've done this.
10.) Gift titles - limited to 1 title in gavelkind for heir of primary title, but can still be useful to rejuggling the way inheritance is calculated.
11.) Change Designated Primary Title - Applies to the specific situation where you have two titles of equal rank and one is Gavelkind. If you select the coat of arms of one of the title you want to make your primary there is an option to "Make Primary". The mechanics are obscure, but doing so can rejuggle the inheritance - I've used this several times, and you can change designation as many times as you see fit with no opinion or monetary cost. I had a situation of Primogeniture HRE and Gavelkind Byzantine Empire titles and changing my primary to Gavelkind allowed my oldest child to inherit both titles somehow... or was it the other way around? Can't remember except that it fixed my inheritance problem without me having to do anything bad to my kids.
12.) "Three-Step Bishop" - Allows you to work around the rule against giving your primary heir a bishopric. As described by keynes2.0:
1) Give a barony
2) Give a bishopric/town
3) Revoke the barony
