Ok, so I know that in some circumstances I can conquer another nations capital without annexing the nation.

Can anybody tell me what these circumstances exactly are? (or what the restrictions are)

You need to have a claim on it, the capital needs to be isolated (not border any other provinces of the holder nation) and then declare a conquest war for the capital. in the war demands, you can only demand the capital province (and reparations, tradepower etc, but no other provinces).
