Nm... I figured it out, was insanely easy.

You need to change the state for the affected provinces in province.csv (the column labeled "area"). Depending on the provinces, this may be overridden by state definitions in scenario files so you may want to check those. Note that those overrides cease to function for a province when it changes owners; only the province.csv state definition will apply then.
