I would like to change the boring white-blue striped coat of arms of Iceland with the one of Autisland, the starting province of Iceland. So if anyone knows how to do this please let me know. Thanks in advance.

Where can I find these .dds files, Which do I need to rename and How do I need to rename them?

They are in <ck2>/gfx/flags directory, and they are not dds but tga files instead. You can even edit those flags in image editing programs like Adobe Photoshop.
