For me, specialists are an integral part of the fun. I prefer an Infantry Corps consisting of one 2xINF+ART+ENG division, one 2xINF+ART+AT, and the other three divisions with 3xINF+ART. The ENG and AT mainly do what they're good at, and the other three divisions are optimized for breaking soft enemy units. I often add an INF brigade to the HQ as well, and have turned it into a full 6th division in a few games where decent commanders were limited.

The Armor Corps may consist of 2 or 3 divisions of (LARM or ARM)+2xMOT+AC for the spearhead, and the rest of the Corps will typically be 2xMOT+(SPART or TD)+(AC or ENG) for staying power. My follow-up infantry Corps operating with the armor will normally move 2-3 divisions at a time though the gap behind the armor and motorized to reinforce encirclements or secure the line of supply behind the armor, and I try to pin the enemy units at the shoulders of the breakthrough with infantry attacks by my main line, so they can't hit the units moving through.

I don't typically run foot infantry and armor in the same Corps, but regularly mix Armor and Motorized units. That fast Corps will normally operate directly with at least one more Corps of conventional infantry, first to create and secure the initial breakthrough, then to reinforce and consolidate whatever gains the armored Corps manages to make. Meanwhile, the regular "line" army holds the spaces between the spearheads, and either pins enemy units to prevent their interference with my armored and motorized units, or follows the enemy when they try to escape and assists in their demise once escape has been cut off. Once the enemy can't even maintain a coherent line, THEN it's time to turn the exploitation units loose to grab VPs. I generally don't win quickly, but I do tend to win decisively and fairly economically.
I didn't mean to imply that I put nothing but tanks in, or armour, in a Tank formation. In fact, like you I mix tanks and infantry in my formations. But any infantry in a Tank division have to be motorised so that they don't drag them back.

Typical structures I use are:

Tank Division:- 2xArmour 1xMotorised Infantry 1xSelf-Propelled Artillery or Engineers
Mechnaised Division - 1xArmour/Tank Destoryers 2xMotorised Infantry 1xSelf-Propelled Artillery or Engineer
Motorised Division - 3 x Motorised Rifle Regiments 1 x Self-Propelled Artillery or Engineers
Fast Tank/Cavalry Division - 3 x Light Tanks 1 x Armoured Cars (repleced the original cavalry divisions provided to the Soviets)
Rifle Divisions - 3 x Rifle Regiments 1 x Artillery

Likewise at Corps level the mix is usually 1/2 x Tank Divisions plus 1/2 x Mechanised or Motorised Rifle Divisions. The aim ebing to ensure the entire Corps is mobile and can cover ground quickly.

Foot slogging Rifle Divisions are kept in their own Corps and not mixed with the mobile units.

Likewise Armies tend to be Tank Armies consisting of 3/4 Tank Corps or Line Armies conssting of nothing by Rifle Corps.

Tactically the aim is to breakthrough and then penetrate deep behind the enemy front with the Tank formations, aiming to capture strategic locations and VP's as quickly as possible. The Line/Rifle formations pin the enemy in place and move into the breach to keep it open.

You only need one armor brigade to provide the armor and piercing stats to the division. The second brigade only lends more HA and SA, plus lowers overall softness. I find that a second MOT brigade provides almost as much punch for WAY less cost and supply/fuel use, unless you're really going for ultra-hard divisions. Since the SU tends to add AT to most divisions, that's not always the ideal approach.
