I'm a total newbie to this game, but I did play CK1 a lot and one difference with it irritates me very much. In CK1, I could invade a pagan or muslim country time after time and tear it apart eventually. Now it seems I can't do it. I declared war on Pechengs over a duchy, and upon my winning the war, the pagans became my vassals with -100 relations with me. They rebelled, I beat them again, and again they were my vassals. It seems like it's not going to end, ever, unless I manage to convert and appease them, which could take ages for all I know. Is there a way to get a duchy off a pagan ruler and not make him my vassal? If not, is there a way to remove his titles from my realm? And what sense does it actually make?

If somebody revolts against you, you can revoke one of their titles for free. If you have Medium CA, you can always revoke infidels' and heretics' titles for free.

uh if they rebel you need to imprison them and revoke their titles.

or you can demand they convert religion from prison after you imprison them.

or you can just banish them and then banish everyone else in your realm.

or you can use the Holy War CB and then you won't have to bother with the pagan vassals

or you can get medium(?) crown authority and revoke pagan titles for free

I mean there's like a million things you can do...

You can declare holy wars against pagans for individual duchies, and upon winning you will take all the counties and holdings the pagans have within a de jure duchy for yourself, clearing them out entirely and giving you personally all of their holdings. You must have declared a war for your claim or something, which would make them your vassal, something you definitely don't want to do in almost any situation.
