Seems like blobbing is worth while only with Hordes or I haven't figured out the wide play with unstating things and how gov capacity numbers are affected. Seems like wide play is all trade focused for income and tbh I still have some learning to do with this part of the game.
You have at least 3 +100 gov capacity privlieges for 5 crownland, you also can use gov reform progress to translate to gov capacity, then you get courthouses and can start trimming the fat before you get the manufactury
In all this time you can still be using vassals as strong duchies just gives -+2 dip slots for free basically

In wide play you dont really state , culture convert, and convert religion slowly. So there will be like no income from tax and production until mid game. Really not the meta to blob until absolutism right now.
you can blob pretty hard in late reformation now. Catholicism is now absolutely bonkers, you can stack 70% -province warscore cost by 1585, between malta, counter reformation bonuses (-10% for " catholic mysticism" completely free), diplo, and age bonus. You just need someone to feed the over-extension to, which comes to the next thing i've discovered: you can now literally PU anyone. You can PU ming, and have a 1500 dev bulldog. Since you can stack -70% province warscore, you can force vassalize insanely large countries. You get prestige out the ears between conversion, exploration, etc, so you just spend down their liberty desire. When you have your ducks in a row you

1. force change their religion to catholic
2. royal marriage them
3. install your dynasty on them
4 grats, now they are your dynasty with a weak heir. HOW CONVEIANT!
6. release on the first of a month, claim throne the 2nd of the next month, you'll get it before they break off royal ties.
7. declare to restore union.

Its a really valuable nation (like Ming with cores on all of china), just trucebreak before something funny happens, the stab hit can be bought back with more pope mana, and once you reclaim all of china no one will mess with you.

that said, don't vassalize ming when they have the emperor of china, it doesn't go away.

This means you can make a little overextension bot in every major land mass you can have coring for you, and the dev total will never lead to them being upset.

Changes to the AI and some other stuff may have me checking it out again...so I guess overall how is the game nowadays?
No more protectorates. All countries apart from the New World are equal in tech late game. So many gimmicks and mechanisms that tend to overwhelm the AI. Early EUIV was a lot better and more historical game, even without some of the good mechanisms introduced in later patches. The institutions completely took the Europa out of the Europe Universalis, and made the game feel more like Civilization where everyone is in equal footing.
