If you look west, you will see hordes of crappy provinces that mostly start in Hungary. That are not only Catholic, but are things like magyar, german and slovak in culture. All wrong for the OE. Should I even bother taking them despite their status as cores?

I'd forget about Hungary and the Balkans and go for India, Persia, Northern Africa, the Mongols (think African and russian gold).

Ignore the Balkans, take the Arabian peninsula, follow the north african coast... Around 1520 will be the right time to capture Spanish capital and make peace. Then start colonizing
The only reason to strike towards Vienna is to get rid of Austria before it inherits Hungary and Bohemia. But it is not a particularily profitable endevour with the Ottomans (though celebrating Austrian demise may be). I would concentrate on securing the Middle East and the North African coast and enjoying jumping up and down on Persia.
The shiites will of course be your main focus (getting rid of them - conversions) and always be wary of Russia, he can be a burr under your skirts. A big one.

Take Hungarian provinces and then release them as a vassal. Austria will keep attacking Hungary, giving you an excuse to declare war on them. After the victorious campaign, give Hungary more of those less valuable wrong culture Christian provinces if you don't want them.
I take it all. They're cores, and it feels good to be superman in Europe and think of all those petty Christian countries cringing.

Yeah, especially when you play on very easy/coward like I do. By 1662 I extend from Morocco to Somalia along the coast in Africa, I had to stop myself with owning half of Hungary in Europe, I've taken the Beleares and Malta and converted them to sunni (not exciting I know, but I'm happy about it), I've annexed and colonized most of central India (damn Mughals to the north), and I'm colonizing Indonesia.
Regarding annexing Austria, then if you convert Austria to Sunni, release it and feed it with germancultured provs. That is fun. An islam Germany...
