Being that I have a duchy in Ireland (Munster) how can a random Duke from Moray (which is in Scotland) usurp the county of Desmond from me? I though counties were not usurpable?

Counties can't be usurped. Duchies/Kingdoms/Empires can be usurped. Are you sure he was not usurping the Duchy because he had more counties (or half the counties) in the Duchy than you?

Or do you mean you just lost the county (not usurped) to him? It is possible to lose a county to another duke during succession for the count (not for you). See example below.

Your count A marries other Duke's count B.
Count A and B have a kid.
Count B dies first and other Duke's county goes to Count A/B's kid.
Kid AB's (Count A and B's kid) is now a vassal to the other Duke.
Count A dies.
Kid AB is now Count of both counties.
Kid AB is a vassal of Duke B (other duke).
Your county now belongs to Duke B.

If your Crown is high crown authority or higher, this won't happen. Be careful though as the effective crown authority is the de jure Kingdom's authority and not the de facto Kingdom's authority. For instance, if your King has high crown authority, but the county is in another King's de jure territory and that King has medium crown authority, you can lose the county even though your King has high crown authority.

It came up and the message was "So and so has usurped the title of County of Desmond" and then he owned it and I didnt. Im guessing since this is non-standard behavior that perhaps its a mod Im using (forgot to mention that). CK2+ ? Ill go ask them about it.. perhaps its as intended.

Better ask them, I don't think this is supposed to happen in CK 2+, might be a bug.
