Just thought that getting "Georgia on my Mind" achievement with Georgia would be fun enough and challenging. So it was really challenging, since I didn't blob, just colonized and waged colonial wars.
How do you usually go about picking a country to play as?

I feel like the odd one out reading this, I press random until I find a country that seems interesting enough (pretty much not native/siberian tribe/terribly positioned opm). Although I avoid playing two horde games/ or two EU majors etc in a row.

Previously I never moved out of Central-Europe. But recently I started to check what achievemnts are available and even if I did not get them, sometimes I've found some fun countries to play. Currently I'm in a very satisfactory Kilwa game. Before that I had a rushing Ayutthaya game where I had to tackle Ming in every way possible. Previously I unified Italy the first time but did it with Urbino.
So if you have no idea what country to play, I'd suggest to try to get some of the medium-difficulty achievements, and you may find some fun countries.

Depends. I typically do one play though of each region per expansion. Since custom nation became a thing, I like doing custom nation -> national union.
My first games post-expansions are always Poland and France jsut to get a feel for the new game balance and such After that, Italy, then Germany. Beyond that wherever the fancy takes me. Sometimes inspiration will strike and other times I'll click around the map for 20 minutes, decide no one sounds interesting and quit.
To be honest, I've never much cared for achievement hunting anyway. Having someone else give me a goal takes away the open free feel of EU to me. I like a lack of specified goals and prefer to jsut react.

I only play mediums and above. All others are eliminated.
Pretty colors a plus. You have to look at your country the whole game after all

After new patches i usually try the same list of countries. Milan, Novgorod, Dai Viet and Carib are all go to guys for me.
Besides that I'm mostly pressing random until something comes up that sparks an idea.
There's a few "rules" though.
I don't play with onesided ideas. Anything complete focused becomes boring real fast. Brandenburg is one of the main offenders on this list, and I had great hopes for CS. Alas, the story of someone taking clay no one else wanted and turning it into a military powerhouse isn't interesting enough. (-20% dev cost, -10% mil-tech costs and +1 dip-rep wanted. Prussian Ubermensch stats has to go)
I guess people want their terminators, and that's ok, but it's just not for me.
I pretty much never play majors. Snowballing is too fast.
Map-color is more important than anything though, when randomizing. I'll be looking at it for a long time, so it can't be horrible.
In a savoy run some patches ago I formed Sardinia-Piedmont and then instantly quit. That baby blue color was too horrible to endure.

I don't do achievements, but I pick my countries based on goals for a game, whether that be historical countries or custom nations.
Last game was to control the Genoa trade node and do a little colonization as a trade empire. Decided to create a custom nation for it so I could tailor my NIs and it has been good fun.

2. Expansion potential
3. Dying empires and trying to revive.
I never take a large country. Even Austria is too big for me to enjoy. I prefer taking a country that can grow. That also means avoiding HRE unless it personally interests me. I like to build new empires that never quite existed and take them from a tiny nation to a world conqueror.

I think of an idea I want to base the game around. Something like conquer only the Italy region or create a trading empire.
Then I pick the region (if an option) that I think will be most interesting for that game style.
Then I pick a specific nation based on how difficult a game I feel like.
For example, last game I felt like playing a land based power to play around with high combat ability and the new fort mechanics, Poland is too strong but Hungary got some nice buffs in the patch and has good ideas, so I played them.

Most of them are already designed around interesting goals and a variety of starting situations. Makes it easy to find a unique new game... like my current first-ever game as Prussia.

I try to get as many achievements as possible in one round, for example playing Albania aiming for "Albania or Iberia" and "Spain is the Emperor" in the same run.

Whatever strikes my fancy, either in a whim or as a result of other games I've been playing/things I've been reading. For example, right now I'm itching to start a Portugal game and go full Lusitania on the Iberian Peninsula after reading about the Grand Lisbon Earthquake. But to do that I need to A - wait for the next patch that will fix development costs and B - Finish my current Teutonic Order -> Prussia game that's been inspired by playing goddamned Ace Combat 4, 5 and 6 and thus having an uncontrollable will to eat all of Eastern Europe.
