As Denmark, I conquered Norway 31 years and two kings ago, but the vassals still get a -30 (!) modifier for me being a "foreign conqueror". I can't seem to find much documentation on it. Anyone know what the conditions are for making it go away?
It's not a Foreign Conqueror, but rather a Foreigner. You have to educate their children to be properly Danish rather than Norwegian so that can go away.
Foreign Conqueror is a modifier you get when the county / duchy / kingdom / empire have the conquest culture of your culture, and this vassal has different culture from you (probably the native culture of the title?) To get rid of it, I suggest you give him lots of gift and educate his heirs, so when he dies his heir adopted your culture
