If you're strong enough to take them on, I'd attack with the intention to force up their debts, war exhaustion and devastation as much as possible. This means not taking the wargoal, avoiding stackwiping their armies and leaving their fleets intact while dragging it out as much as possible. Then, when call for peace starts becoming a problem, make a white peace. This is important, since if you demand any concessions their WE will decrease and they get revanchism to help them cope with rebels and dogpiling. Then watch as their bankrupted nation gets overrun by separatists from about a dozen different nations.

Just eat them. Waste of time lowering mandate when you can already kill them.
Making them implode means not having to wait out enough truces to eat several 100% warscore worth of land. 10 nations that can be annexed or subjugated in a single war or two each is much quicker to take and means facing smaller armies at a time and less need to siege down strong forts more than once. Just because you can do it one way doesn't mean there aren't any stronger options. Even if you won't choke on Ming as-is, smaller morsels can be much tastier.

My plan wasn't to lower their mandate (that's just a side benefit speeding things up) but to make them break to separatists and get into a bankruptcy spiral that the rump state can never recover from.

I find it very odd how you are this strong with Mughals in 1562 and yet are asking how to do a Ming explosion.

Anyway, occupy all of Ming's provinces so they will accumulate WE and devastation (scorch earth if you wish). In the peace deal ask only for money, war rep and transfer trade.
