I'm reading the tooltip when I hover over a claim icon in the province view and I am getting confused about what it means.

It says that the claim will expire on the day my truce ends but it also says that the claim will not expire if I am at war. Does that mean that if I start a war with somebody else the day before my truce ends then I can keep the claims alive and avoid taking a stab hit?

So does this mean that if I hit pause as the day ticks over I have a one day window to declare war without breaking the truce and without losing the claims?
Yes... though now I'm thinking the claim only disappears at the end of the month, so you'd have until the end of the month.

If you conquer those provinces with claims, you will have to be quick on starting cores otherwise the claims will go away by the end of the month when the truce is done, and that would mean more expensive coring costs.

Claims only expire as the month changes. So if your truce ends, say, January 7th, you can declare war on January 31st and still "refresh" the claim.

There is a bug(?) though with truces if you have a claim on a province that is about to expire and then take it once you win the war. The claim will not last the full truce but expire as soon as the month changes. The game doesn't seem to "remember" that you took the province from the country that you now have a truce with and only sees that it's supposed to expire this month. This is important if you want to sell a province to a vassal that they have claimed but has never owned. You need to sell that province to the vassal immediately after making peace and before the month changes.
