In my current game, I've taken contrl of Rus but just has an invasion from the Golden Horde and lost half my kingdom. Even when I engage them with a force that's about equal in size, they have 10 - 15k Horse Archers and I get wiped out. I'm playing as Francia and control Jerusalem, France, Britania and Rus. My culture is English so Longbowmen are my cultural specific unit. Does anyone have a suggestion on how I can hold onto RUS the next time the Golden Horde comes knocking?

If the HRE still exist at this point, you could make an alliance with their Emperor and try to use them to hold on the Rus that way. Otherwise, I would say your holdings are too faraway to prevent Rus from being swallowed up by the Golden Horde.

I was hoping if I assinated their leader, it would stop them but no such luck. If I had the French culture and had a lot more heavy cavalry, lets say 8-10k, would I be able to defeat 15k horse archers?

The Rus is preety much doomed when the GH appears if you didnt expand quite alot into Europe and dont have aton of allies to serve as cannon fodder to the deathstacks. In my current game I was actually able to hold them off, but only because I was able to win the crown of france and the HRE fairly early on, plus I spent decades subduing england and I won the crusade for Jerusalem, so when they showed up I was actually able to match their numbers, but only due to such an absurdly huge empire. Overall, you really gotta cut your losses when they come down your way.

I think after swallowing Rus Mongols will be less agressive and dangerous, so i think you should rather give away land and then try to counterattack during some nice occasion.

I've had the best success against them with lots of heavy infantry retinues. A mostly heavy infantry army will use shieldwall during the skirmish phase and therefore avoid a lot of the devastating horse archer damage. Then during melee they come out on top.

I'm not sure how longbows would fare. They are extremely powerful in general. They should really cut down on the number of horse archers, particularly because both armies will try to stay in skirmish for a long time. But they will also take a ton of damage themselves. So on paper it should be two powerful armies destroying each other, with the horse archers probably coming out on top. Your best bet is probably to keep throwing longbow armies at them and losing, but over time killing all the horse archers which mostly don't get replaced.

In my Byzantine Game, the Ilkanite had taken the entire eastern edge of the map. So when the Golden Horde showed up, they and the Ilkanids clashed and the ilkanids crushed them outright. All of Egypt and Persia were Mongol...but Rus managed to survive.

To beat the apocalypse incarnate, the Mongols, you need-
1. A strong state, you had to rush to compose this and keep it together. Put your funds to acquiring territory that can supply your war machine, buffer your important regions, and maybe a nest egg to hide in and cry in after all your shit is taken by horse riding devils.
2. Location, the farther away, the safer you are, because everyone in front of you has to get murdered for them to eat you. Buffer states are great, however they need to last, if not eat them yourself.
3. Alliances-Anyone who can send a good sized force is great help. Hopefully your brothers of faith intervene.
4.When in doubt attack first- the AI never breaks treaties, so attack them for a shitty duchy or something. You will lose, but you can thin them out and only lose what little cash you have and the little respect you have left.
5. Wait for them to kill each other, the hordes are greedy pigs and will murder anyone including the other horde, after the hordes clash ,if it happens, go nuts and eat them in a mad frenzy until the area of that map is your color.
6. Try to funnel them, hate that guy to the south of you? DOW the horde nearest and in the treaty time they will have already killed him for you.
