How do i conquer a barbarian territory?

it has colonized greyed out and i have my army in their territory but it doesnt give me an option to do anything.

You need to station an army in province which you want to colonize. In addition, your province should have civilization rating at 50% or higher and that province should have at least 10 units of population as well. At Vae Victis computer will notify you when this is possible.

Then you will send troops and you must wait. Local barbarians will not take up arms at once but sooner or later they will take attack against your army. Defeat that army as fast as possible. After that attack there will be one unit of barbarians at that province. Now you colonize that province.
