I bought "Cities: Skylines" on Steam and I saw that I need to redeem the game in the paradox site to get more parks in game but I can't redeem it.

In Steam while viewing your games through the Detail View you can click on the CD key option on the right hand site list to get your CD Key then click on Register a Game at the top of this forum and paste the key in there to get the little Chirper Icon under your avatar. (Not sure if it's working 100% since the forum upgraded as I registered the game before it changed.)
Then when you boot up the game log in using the same details as your account here and it unlocks the Paradox Plaza

after I'm entering my CD key at the Paradox Plaza site, the site wants me to decide from an opened list a game, and "Cities Skylines" is not listed there.
Looking at one of the threads in General Discussion I don't think it's possible to register Skylines right now from the drop down list but you could still try logging in to your Paradox account in game and see if it unlocks the plaza anyway.
Edited to add: When you do eventually get the option to register the game I Just remembered that registering my Skylines game was a bit different from the others. I bought the game from Greenman Gaming so I had to use a separate forum key that they provided to register my game on the forum and not the CD Key from Steam.
If you bought the game directly from Steam there might be a different procedure to go through. I'm sure it's mentioned in the Skylines sub-forum somewhere.

I tried now to log in in-game but the boxes of the email and password just went grey and unclickable and stuck like that...
the parks still aren't appearing.
and it's not only the plaza. I have few parks missing... paradox plaza, the Japanese one and few more that I can't remember they're names...

Paradox just changed forum software, and it went live today. One of the current known bugs is that the Cities: Skylines registration page is inaccessible.
The announcement at the top of the page says that as the week progresses, and they continue to configure the new software, they will try and smooth these things out.

To get this game on the Switch you have to buy that version from the Nintendo store.
