How can I make the game challenging again?

I have almost 700 hours in the game, and while it is still fun playing at the beginning, I get too big too fast and I just subconsciously blob. I wanted to play a slow reconquista game as Suebi Asturias and then one thing lead to another and in under 100 years I conquered Hispania, Jerusalem, and Morocco. This happens in most my games. What can I do that will mix things and and make the game interesting again?

Start as the shittiest little patrician you can find. It can be really fun.

You are really just a baron. A baron with one family holding with no upgrades, and the ability to build trade posts.

Play as tribal and use the seduction focus to create as many children as possible. Legitimize all of them and never change the succession laws.

House Rules. Don't blob, RP your traits, etc. At it's most basic, don't always choose the best option; choose the most "fun" and/or the one that fits the character your playing.

One house rule I have is always balance tech-you can't select a tech if it puts you more than 1 level ahead of any other tech in the same group. No rushing legalism and mil org so you quickly become invincible due to large demesne and retinue.
