I quite enjoy CK as light relief.
The game is currently easy (even on relatively hard settings), except for the Mongol invasions. Hence you can muck around, searching for suitable brides for your sons, etc.
Accordingly it can be fun to aim for your own target, eg I am currently working on putting a relative on the throne of each of the EU2 starting kingdoms (in Europe).
Also it makes for interesting "character" gaming.

BUT if you are after a competitive challenge, you will have to wait for further patches - or play MP.

While many here talk lovingly about the competitive aspects of multiplayer, I've also found that cooperative multiplayer can be fun as well. This is especially the case when you want to play weaker powers and team up against the big bad folks. (For example, playing multiple Iberian powers and trying to take down the Almohads. Lots of fun, that.)
