Hello, i've played with Nords a bit and reformed my pagan empire, then i bought Holy Fury expansion. Since i had no option to pick and choose my doctrines when i reformed does doctrine system from expansion applies to my faith and if it does what doctrines are picked by default? And is there a way to change it?

I didn't even think pre-HF saves were compatible with HF.

Without save file editing, you can't reform a second time time or alter the religion once it is reformed.

If Holy Fury was disabled, the reformed religion has no nature, doctrine, or leadership. Its default features will be those of pre-patch 3.0. Eg. Germanics have a temporal religious head, all others have a theocratic religious head.
I didn't even think pre-HF saves were compatible with HF.
They are compatible by necessity, since players with Old Gods can play pagan but can't select a reformed religion's nature, doctrines, or leadership.

Hell, the game won't crash from loading a save dated from the release of Conclave. It'll mess up provinces and holdings though. I know because I actually tried it.

Yeah, that's what I was getting at--I thought that there were a few new provinces added in HF that wouldn't be there in an old save.
Not even that! New provinces don't cause trouble, they just get assigned to the closest landed ruler on the first tick. The game will even generate a full history of Chinese emperors (for players who started a game, bought Jade Dragon and then want to continue that game). The first Western governor will be a kinsman of the Emperor and will not show up in the title's history, but other governors will be fine. But many holdings were removed or had their syntax tweaked between Conclave and Holy Fury. Many barons retroactively lose their holdings (it won't even show up in dead characters' history). Some counties will also be named PROV[number] for some reason.

You could always switch to a different, unreformed Pagan faith, and reform that. There's usually a bunch of Pagan survivors you can concubine convert with, or at a pinch turn on the Aztecs and access them. I can confirm from my current game that starting with Sunset Invasion turned off and later enabling the DLC mid-save does not invalidate Ironman.
