there are a few exciting things that happened during the middle ages in holstein that are like they should be paradox events or decisions.
lets start with Friedrichstadt. this is now a town in Holstein where nothing special has ever happened, but the founder of the city saw it as a great trading hub like amsterdam or st. petersburg. it was founded in 1621 by the holsteinian duke and dutch colonists in slesvig and was also dutch speaking. i imagine it like some sort of panama canal progress wich can make it turn out like the town it is IRL now, or make it a gigantic trade node with big basetaxes and free buildings and might even make this the province capital. this might make playing this a lot more positive.
the next one requirs a mapchange. a split of the province into holstein and ditmarschen.
the ditmarschen peasants republic was a country that was made out of the county of ditmarschen but was eventually put down after the kalmar-union marched in. this could make for some interesting events and of course a new nation with maybe some powerful ideas.
i'm not even from there but it has such a nice and complex history that i think it would be a shame to leave the whole region untouched. (i go there ocassionaly on vacation though.)
