How do you see a history log for a specific country?

click on the crest of a particular holding. You'll get a screen with some blue buttons on the top (usurp, claiments etc.) the last one on the right says history. It'll show you all the previous title holders.

I meant more specific information, like what wars they have fought, the results, etc... or is that kind of information impossible?

I don't believe that that is complex in one place, but some of that can be found in the ledger. Any lasting effects of wars are recorded somewhere as well.
