I managed to siege almost all light blue counties, and even went for Polish capital, but warscore is crazy -120% for “defender holds war target”… I think I gonna need to surrender unless anyone can help me out with this bs..
or is that a bug??

it is a bug. there are some threads at the bug-subforum.
have you try to save and reload? someone said that it resolve the bug, but i cant make any promise.

Their War target definition sometimes was crazy, so I thought I should check. Maybe they should be giving a hint next to it (I.e. defenders controls war target - occupy any of these counties (list) to stop warscore from ticking)
